Summer Dining Feature – Four Seasons Hotel Singapore: 101 Days of Summer Afternoon Tea

This summer, Four Seasons Hotel Singapore invites guests to embrace the season with a curated selection of on-property holiday activities designed to highlight the best of summertime in the city. The warm, sunlit ambiance provides the perfect backdrop for a memorable escape, all without leaving Singapore.

The season also welcomes a noteworthy addition to the hotel’s culinary team, Executive Pastry Chef Daniel Windelhed. Known for his innovative approach to desserts, Chef Windelhed brings a fresh perspective to the hotel’s sweet offerings. To mark the summer, he has introduced the exclusive 101 Days of Summer Afternoon Tea experience, available weekends at One-Ninety Bar.

Drawing inspiration from his Colombian heritage and Swedish upbringing, Chef Windelhed crafts desserts that reflect a love of nature, design, and refined simplicity. Highlights of the seasonal menu include the Makrut Lime and Lemongrass Panna Cotta, Yellow Peach Cheesecake, and house-made Brown Butter Madeleines served with strawberry compote and clotted cream.

The savoury selection is equally compelling, featuring the Spicy Duck Salad with Pineapple and Cilantro, Crispy Pork Belly Bun with Mango and Chilli Chutney, and the Boston Lobster and Papaya Summer Roll.

Complementing the menu is a series of four craft summer cocktails by Head Bartender Sophia Kang. Among them is the Jardin, a refreshing blend of Patron Silver Tequila, Ancho Reyes Verde, lime, herbs, and rosé prosecco, a nod to Singapore’s tropical vibrancy.

The 101 Days of Summer Weekend Afternoon Tea is served from 2:00 to 5:00 pm every Saturday and Sunday, from June 7 to September 7, 2025.
