Chef Dato’ Fazley takes diners on a flavourful Malaysian sojourn with classic recipes drawn from different regions and communities. Dishes showcase ingredients and techniques from around the country, tracing a route from the eastern lands of Sabah-Sarawak to the southern coast of Johor, through the central highlands of Pahang and all the way north to Kedah and Perlis.

Regional crafted creations such as Nasi Kebuli Kambing (roasted whole lamb with spices served with raisin rice pilaf) and Itik Golek Pekan (carved coconut-marinated smoked duck with pickled jalapenos). Also on the menu are regional delights such as Telur Pindang Rainbow (century eggs cooked in heritage Johor style) and Lepat Loi (glutinous rice wrapped in banana leaf, a staple of the Bugis community). And what would Ramadan be without the comforting taste of Gear Box Soup (Soup Kali Umbu)?
