Chef Yannick Alléno announces the opening of Pavyllon London, his inaugural restaurant in London, along with its dedicated bar, Bar Antoine.

Located in Four Seasons Hotel London at Park Lane, Pavyllon brings Chef Yannick’s sophisticated neighborhood dining style to the city, presenting a British interpretation of his renowned modern French cuisine at one of Mayfair’s most prestigious locations. Bar Antoine, on the other hand, offers a more playful approach to gastronomy, paying homage to Chef Yannick’s late son Antoine, an aspiring chef himself.

Pavyllon London offers a variety of seating options, including a restaurant area, counter seating, a private dining room, and a 30-person terrace for al fresco dining (to be opened later). The focal point of the restaurant is the open kitchen, bordered by an expansive wooden counter that accommodates 30 guests, allowing them to experience a Chef’s Table atmosphere within the main dining area. Pavyllon London perfectly embodies Chef Yannick’s dedication to blending expertise, excellence, experimentation, and seasonal ingredients to modernize the fundamentals of French cuisine.

Chef Yannick is renowned for his revolutionary culinary approach, which includes his pioneering technique called “Extraction,” primarily applied to sauces. This method involves cooking an ingredient in a vacuum at a precise time and temperature to extract its purest flavor, followed by cryo-concentration to capture its essence. By enhancing flavors, this process also reduces the levels of sugar, salt, and fat in the final product, reflecting Chef Yannick’s belief in chefs’ responsibility to prioritize their guests’ health.

The menus at Pavyllon London cater to breakfast, lunch, and dinner, offering à la carte options as well as two tasting menus priced at GBP 98 and GBP 148 respectively. Additionally, there is a lunch set menu available for GBP 55.50, offering five courses. Chef Yannick, alongside Executive Chef Andy Cook (The Maine, Savoy Grill) and Head Chef Benjamin Ferra Y Castell (Pavyllon Paris, 101 Dining Lounge Dubai), draws inspiration from Britain’s exceptional produce while staying true to French culinary techniques. The result is a selection of meticulously crafted and innovative yet unpretentious dishes, including:

– A contemporary twist on the classic prawn cocktail featuring fennel, cucumber, dill, trout roe, and parmesan.

– “Badaboum” organic egg accompanied by osciètre caviar, sorrel, and Salish smoked salt.

– Linguine served with pesto verde, shrimp extraction, scampi tartare, and sudachi.

– Modern beef fillet stroganoff served with crispy potato strings and basmati rice.

– Surf and turf delicacy featuring wagyu beef mille-feuille and a blue lobster tail.

Bar Antoine, located in the heart of Mayfair, has been meticulously designed to provide a sanctuary for guests seeking a culinary haven. The bar boasts an innovative cocktail list and an extensive menu that takes inspiration from nostalgic flavors. Collaborating with Chef Yannick, Michele Lombardi, the Head Mixologist who recently joined from The Ritz, and Bar Manager Ivan Arena have crafted the cocktail list.

The cocktails at Bar Antoine are driven by bold flavors, featuring reimagined classics like the Bloodier Mary, infused with aromatic tomato and celery essences, and an Espresso Martini topped with a mushroom foam. In addition to these revamped classics, the bar offers original creations, spirit-free cocktails, and a selection of “Allenotics,” which are unique tonic mixers meticulously crafted by Chef Yannick and the Bar Antoine team. These mixers introduce fresh and distinctive flavors such as beetroot and aromatic citrus, elevating the experience of mixed drinks.

Complementing the innovative cocktail selection, Bar Antoine offers a diverse culinary menu that celebrates global cuisine and showcases the finest ingredients available. One standout dish is the Antoine’s Burger, a labor of love that required three months of development. Drawing inspiration from fried bread found in northern Africa, this indulgent burger features a light and crispy bun paired with teriyaki-infused beef, creating a truly exceptional culinary delight. The menu also includes a range of Japanese favorites, paying homage to Chef Yannick’s numerous trips to Japan, as well as an XL Caesar salad with caramelized chicken and the Chef’s unique take on a BLT sandwich.

The masterful interior design of the establishments has been expertly handled by renowned Parisian designer Chahan Minassian. With a longstanding collaboration history alongside Chef Yannick, which includes projects like Pavyllon Paris and Pavyllon Monte Carlo, Minassian’s work has garnered immense admiration from prestigious publications such as Architectural Digest, Vogue France, and Forbes. His cosmopolitan style, known for skillfully incorporating contrasting textures in harmonious tones, consistently produces a result that is simultaneously timeless and contemporary.

At Pavyllon London, Minassian’s artistic interiors strike a delicate balance between elegance and warmth, creating an inviting atmosphere that makes both local residents and international visitors feel truly at home. The space artfully combines the convivial charm of a Parisian apartment with the cozy ambiance of a traditional British club. Through the use of contrasting textures and fabrics in complementary hues, the interiors emanate tranquility, which beautifully contrasts with the captivating open kitchen that commands attention in the room. Bar Antoine’s interiors exude a similar sense of effortless warmth, featuring wood-paneled walls and plush seating upholstered in cozy bouclé, mohair velvets, and woven silks, mirroring the main dining areas. Furthermore, guests will soon have the pleasure of stepping out onto the spacious outdoor terrace, set to open in August, designed as an elegant and discreet garden with an additional 30 seating options.
