Tivoli Hotels & Resorts’ Tivoli Kopke Porto Gaia Hotel has partnered with three-Michelin-starred Spanish chef Nacho Manzano, who will lead the hotel’s dining experiences. He will oversee 1638 Restaurant & Wine Bar and Boa Vista Terrace, bringing his celebrated culinary expertise and the rich traditions of Northern Spain’s Asturias region to this new luxury destination, opening next month in Portugal’s Douro Valley wine region.

Chef Nacho Manzano, born in the small village of La Salgar in Asturias, developed his skills by working in his family’s restaurant. Cooking recipes passed down from his grandmother, he formed a deep connection with the flavors and traditions of his homeland. Later, he transformed Casa Marcial, a modest local restaurant and his family’s home, into one of Spain’s most celebrated dining establishments, earning its third Michelin star in 2024.

At Tivoli Kopke Porto Gaia, Chef Manzano will bring his signature approach to 1638 Restaurant & Wine Bar, featuring a tasting menu that blends traditional techniques with modern innovation. Guests will enjoy dishes paired with award-winning Kopke wines, known for their exceptional quality. He will also oversee Boa Vista Terrace, offering casual dining with a sharing-style menu and stunning views of the Douro River and Porto. In addition, Chef Manzano will create menus for weddings, special occasions, and corporate events.

Chef Manzano describes his inspiration for this collaboration: “Northern Portugal and Northern Spain share similar climates and culinary traditions, making it exciting to blend the two. The menus will highlight premium ingredients, strong culinary heritage, and the elegance of Kopke wines. Our goal is to create an experience rooted in tradition but with modern appeal.”


1638 Restaurant & Wine Bar by Nacho Manzano

Located in a timeless setting with panoramic views of Porto, this fine dining restaurant focuses on simple yet refined cooking techniques, like steaming and low-temperature preparation, to enhance the natural flavors of each ingredient. The seasonal tasting menu, which changes every two months, will be paired with wines from the Douro region, including rare and historic selections such as the Kopke Harvest 1934.

Boa Vista Terrace offers a relaxed, all-day dining experience, perfect for quick bites, casual meals, or business lunches. Its international menu takes inspiration from Atlantic flavors and combines a friendly atmosphere with stunning views, making it a must-visit spot in Porto.


Opening in February, Tivoli Kopke Porto Gaia Hotel will redefine luxury hospitality in the region. Combining Tivoli’s legacy of timeless travel with the history of Kopke, the world’s oldest Port Wine House (established in 1638), the hotel will offer exclusive experiences like access to the adjoining Kopke Port wine cellar. Additional highlights include the Sky Bar Kopke, a rooftop space featuring signature Port cocktails, and a poolside bar.

As Tivoli Hotels & Resorts continues expanding across Europe, Tivoli Kopke Porto Gaia will mark its ninth property in Portugal, offering guests a perfect mix of history, luxury, and world-class cuisine.
