To mark its landmark 125th anniversary, the Sofitel Legend Metropole Hanoi, the enduring Grande Dame of the Vietnamese capital, is hosting a yearlong celebration of its storied heritage. This month, the luxury destination turns the spotlight toward its culinary crown jewel, Le Beaulieu. The signature contemporary French fine dining restaurant is set to elevate Hanoi’s gastronomic landscape with two exclusive calendar events featuring a powerhouse lineup of Michelin starred guest chefs.

Here is a look inside the exclusive culinary experiences coming to Le Beaulieu this May.

The Rendezvous Collaborative Dinner

A Symphony of French Heritage and Japanese Precision

The festivities commence with the highly anticipated return of Le Beaulieu’s celebrated Rendezvous series. The exclusive two night event bridges two historic culinary institutions: Le Beaulieu, which has defined Hanoi’s luxury dining scene since 1901, and Tokyo’s acclaimed one Michelin star Restaurant Prunier, a fixture of Japanese high gastronomy since 1934.

For this collaboration, Chef Hiroyuki Matsumoto of Restaurant Prunier will join forces with Le Beaulieu’s Chef de Cuisine, Charles Degrendele. Having honed his craft at legendary French establishments, including the three Michelin star La Côte d’Or, Chef Matsumoto is renowned for bringing a contemporary lightness and sensory delight to authentic French gastronomy. Together, the two chefs will present a refined four hands dinner that masterfully fuses classical French techniques with Japanese precision, utilizing the finest seasonal ingredients available.

The culinary weekend culminates in an extravagant edition of Le Beaulieu’s signature Sunday Brunch, heavily inspired by the flavors of Provence. The kitchen will welcome Chef Louis Gachet of the one Michelin star Le Feuillée in Provence to transport diners to the south of France.

Guests will be treated to a lavish spread showcasing exquisite regional creations alongside timeless French classics. The menu features a bounty of premium seafood, gastronomic cold cuts, and imported French cheeses, all accompanied by the sophisticated rhythms of live jazz. It promises to be the ultimate weekend indulgence for discerning epicureans.
