Embarking on a historical culinary journey, the talented artists at Shai Salon present the newly-launched HÉRITAGE Afternoon Tea at Four Seasons Resort Dubai at Jumeirah Beach. Guided by the expertise of Senior Executive Pastry Chef Nicolas Lambert and Chef Axel Godefroid, guests are welcomed to explore the intriguing origins of tea and coffee culture along the historical sea-and-land spice routes that once connected the East and West.

Indonesia

The expedition commences in Indonesia, featuring the lively flavors of the Shrimp Peanut Sambal Sandwich. This savory delight embraces succulent prawns with peanut sauce, enhanced by zesty lemon juice and infused with the aromatic essence of lemongrass and coriander. Following this, the sweet masterpiece of Sumatra Gayo Coffee and Mangosteen provides a delightful conclusion. Combining Sumatra Gayo Coffee Mousse, chocolate biscuit, and tropical mangosteen coulis, it pays homage to Indonesia’s rich coffee heritage dating back to the 17th century.

India

Shai Salon’s exploration of India’s vibrant tea culture unfolds with the tantalizing Chicken Tikka Golgappa. This harmonious blend of succulent chicken tikka within a crispy golgappa shell introduces an authentic Indian flavor symphony. The journey continues with the Karak Tea and Nagpur Orange, a luscious brioche Indian karak tea cream soaked in Nagpur orange marmalade, boasting bold notes derived from the Hindi word for “strong” or “bold.”

France

Approaching France, the Egg and Bacon Éclair offers a refined taste of French gastronomy with its blend of creamy egg, crispy veal bacon, and truffle. This savory delight transitions into the French Lavender Tea and Figue de Solliès, featuring a lavender sablée paired with caramelized figs, drizzled in lavender honey, and crowned with an infused lavender tea mousse, inspired by the fragrance of French lavender fields.

Italy

The journey concludes in Italy, where espresso takes center stage. The Stracciatella with Tomato Consommé weaves vibrant flavors, and the Italian Coffee and Vanilla Affogato provides a sweet finale with fresh espresso, airy light vanilla mousse, and a luscious coffee sauce, capturing the heart of Italian indulgence.

Guests can further indulge in additional delicacies on the menu, including the Caramel and Sea Salt Brioche Feuilletée, Pistachio and Orange Blossom Financier, 66% Chocolate and Hazelnut Cookies, and Freshly Baked Plain Scones Paired with Homemade Jams.

Priced at AED 240 per person or AED 420 for two, the HÉRITAGE Afternoon Tea is available daily from 3:00 to 7:00 pm at Shai Salon in Four Seasons Resort Dubai at Jumeirah Beach, starting January 8, 2024.
