SIDECUT’s New Tasting Menu Showcases the Flavours of British Columbia

Four Seasons Resort and Residences Whistler introduces a new Chef’s Tasting Menu at SIDECUT Steakhouse, an eight course culinary experience created by Executive Chef Shiv Kappal. The menu draws on the defining flavours of British Columbia, interpreted through the chef’s thoughtful and contemporary lens, and further positions SIDECUT among Whistler’s most compelling destinations for refined dining and thoughtful wine pairings.

For Chef Kappal, the tasting menu reflects both a personal arrival and a creative exploration of his new culinary home. His approach centers on British Columbia’s landscape, ingredients, and communities while incorporating the techniques and influences shaped by nearly two decades in international kitchens. The result is a menu designed as a cohesive journey that feels rooted in place while carrying a global sensibility.

The menu itself is inspired by the chef’s early travels across the province, from witnessing salmon runs along the Fraser River to foraging in the South Okanagan. These experiences inform a progression of dishes that highlight regional ingredients while weaving in elements from Kappal’s broader culinary repertoire.

Among the opening courses is a hand cut bison tartare paired with Northern Divine caviar, presented over hand shaped ice inspired by the chef’s first encounter with bison in the region. A signature dish from his global repertoire follows in the form of red Carabinero prawn, served with British Columbia lavender butter, wild blueberry gel, and maple browned morels.

Pasta arrives as a silky Nova Scotia lobster and Dungeness crab tagliolini, a nod to Kappal’s Italian culinary training and a celebration of coastal ingredients. The menu culminates with King River Wagyu MB9+, accompanied by a Pemberton potato truffle pavé that connects exceptional Australian beef with one of British Columbia’s most celebrated agricultural valleys.

Guests are encouraged to complement the tasting experience with a curated British Columbia wine pairing featuring producers from the Okanagan Valley alongside emerging coastal wineries, reinforcing the menu’s strong sense of regional identity.

SIDECUT Steakhouse at Four Seasons Resort Whistler presents a sophisticated interpretation of modern alpine dining, where Canadian Prime cuts and carefully sourced local ingredients are paired with polished yet welcoming service. Inspired by British Columbia’s mountain terroir and culinary diversity, the restaurant offers an elegant setting that continues to shape Whistler’s evolving dining landscape.

SIDECUT is open daily from 5:30 pm to 9:00 pm with two evening seatings at 5:30 pm and 8:00 pm. Guests dining at the restaurant receive complimentary valet parking with their reservation.
