FZN by Björn Frantzén has officially unveiled its inaugural seasonal menu for the year, further cementing its status as a culinary titan in the region. Fresh off its debut at number 22 on the Middle East and North Africa’s 50 Best Restaurants 2026 list, the three-Michelin-starred destination offers an intimate theater of flavor led by the critically acclaimed Chef Frantzén and Executive Chef Torsten Vildgaard. The restaurant remains a masterclass in the creative interpretation of modern European cuisine, seamlessly infused with Japanese influences and local soul.

The journey begins in a stylish, Scandinavian-inspired living room where the atmosphere is as curated as the cuisine. Guests are welcomed with an array of canapés including a new wagyu aburi blini topped with salted lemon and unagi. This opening act artfully balances global inspiration with regional nuance, featuring bites that range from aromatic vadouvan to the Frantzén classic of coffee with apricot and salted lemon. After a guided tour of the house, guests are escorted to the dining room for a multi-course tasting menu that highlights a sophisticated dialogue between international treasures and UAE terroir.

Precision and provenance take center stage in the dining room. Scallop crudo arrives with buttermilk and shiso, enhanced by locally grown cucumber and rich bafun uni. Signature dishes return with renewed vigor, including the celebrated onion, liquorice, and almond composition alongside a decadent French toast adorned with truffle, vacche rosse cheese, and aged balsamic vinegar. The kitchen’s commitment to regionality is evident in the Chawanmushi with grilled razor clams seasoned with black lime, while the main course is elevated by the inclusion of Medjool dates and saffron.

The transition to the final courses is a study in vibrant acidity and floral notes. A primary dessert of blueberry with lemon thyme and batak pepper leads into delicate treats such as the Amaou strawberry with honey vinegar and crown musk melon with sansho pepper. The evening concludes where it began, back in the living room for petit fours and warm black cardamom madeleines.

To accompany the feast, the cellar boasts an impressive collection of over 1,700 labels. The list features boutique producers and global icons from 17 different countries, offering exclusive Dubai firsts. Guests may choose from bespoke wine pairings, sophisticated non-alcoholic flights, or selections directly from the cellar. For those wishing to linger, the terrace offers sweeping views of the Dubai skyline, providing an ideal backdrop for post-dinner drinks.

  • Pricing: The tasting menu is priced at AED 2,000.
