For years Pinot Grigio was handed a single role: pour it with fish. Fresh and seafood friendly, the pairing worked, yet it felt narrow. This Pinot Grigio delle Venezie DOC argues for a wider table.
The grapes grow in the Sylvoz training system, with yields held to 13,000 kilograms per hectare and harvest done by hand with careful selection. In the cellar the fruit sees soft pressing followed by eight hours on the skins, then fermentation at a constant 16°C to preserve varietal character. Five months in steel tanks on fine lees plus two months in bottle give texture and polish.
In the glass it glows an intense pink with coppery reflections, a charming antique hue from that brief skin contact. The bouquet is fine and elegant, recalling white peach and pear with light hints of apricot and hazelnut. On the palate it is pleasant and persistent, balanced between acidity and flavor, closing with a slight tannic touch that adds shape and length.
That balance is why it travels so well at the table. Freshness cuts through fried dishes and fat rich preparations, cleansing the palate. Its savory character embraces grilled vegetables, substantial salads and grain based dishes, especially when lifted by aromatic herbs or citrus.
White meats offer another natural harmony. Chicken, turkey and rabbit, prepared with herbs or gentle cooking, allow the wine to show its delicacy without being overshadowed. Fresh cheeses create lovely contrast, creamy texture met by refreshing lift.
