Crafted under the guidance of Executive Pastry Chef Sebastian Ritzen and his team, the new offering is a poetic journey where each bite serves as a verse, narrating tales through flavors. ‘Poetry and Places’ pays homage to Ireland’s lush terrains and the evocative verses of its renowned poets. Ten meticulously crafted cakes and pastries depict local scenes, while accompanying lines of poetry acquaint patrons with regional folklore.

As guests traverse the western coastline, from Achill Island and the Ring of Kerry to the Wild Atlantic Way and Valentia Island, and make delectable stops at Kilkenny Castle and Newgrange in the east, they are transported to locales that inspired Ireland’s literary luminaries. Seamlessly blending culinary artistry with poetic interpretation, dishes such as Wicklow blackberry wine-infused tart inspired by Seamus Heaney’s ‘Blackberry Picking’ and a violet macaroon echoing Martina Dalton’s ‘Lilac’ elevate the senses.

Alongside these poetic pastries, patrons indulge in delicate sandwiches, artisan preserves, freshly baked scones, and signature confections reflecting the hotel’s architectural motif, like the Battenberg cake, and paying homage to Dublin’s Guinness Storehouse with a chocolate and Guinness delight.

To complement the culinary experience, a tea menu offers 16 premium Ronnefeldt blends served in traditional Wedgewood china, including exclusive flavors such as Cherry Cheesecake, Irish Chocolate Cream, and Irish Whiskey Cream, with seasonal additions throughout the year.
