Exclusive Cantonese Journey Menu at Hakkasan Dubai: A Celebration of Summer and Sustainability

During June, the acclaimed Hakkasan Dubai, located at Atlantis, The Palm, offers an exclusive Cantonese Journey menu curated by Executive Chef Andy Toh. Priced at AED 488 per person, this limited-time menu showcases rich flavors and seasonal ingredients, celebrating summer with a focus on sustainability and local produce.

Hakkasan Dubai, known for its blend of traditional Cantonese cuisine and modern flair, presents a meticulously crafted dining experience. The menu begins with a double-boiled chrysanthemum chicken soup featuring locally sourced chicken from Al Ain farm. Following this, diners can enjoy a roasted sesame chicken roll with fresh Indian mangoes, utilizing the bones from the chicken to create the soup. The starters also include poached Shanghai dumplings filled with UAE-sourced crab meat and prawn.

Main courses feature an MSC-certified grilled Chilean seabass with a traditional Cantonese king soy glaze, wok-seared locally sourced tiger prawn with Chef Andy’s special XO sauce inspired by his mother’s recipe, and a stir-fried lamb loin accompanied by seasonal white asparagus, heirloom carrots, and a spicy garlic sauce. Sides include stewed pak choi and mushroom enoki cooked with stock made from the seabass bones, and a fried trio of organic wild rice. The meal concludes with a dessert of Yunnan tea and seasonal Japanese peach.

In recognition of Sustainable Gastronomy Day on June 18th, the Cantonese Journey menu highlights the importance of sustainable food practices and thoughtful menu design. Guests are encouraged to celebrate this global event by enjoying dishes that are both environmentally conscious and delicious.

Chef Andy Toh, with 13 years at Tao Group Hospitality, became Executive Chef Middle East in 2016 and was recently appointed Corporate Chef of Hakkasan in February 2024. His culinary expertise combines traditional techniques with modern outcomes, emphasizing the finest ingredients to embody Hakkasan’s authentic yet innovative philosophy.

Available from June 1st to June 30th, between 6:00 PM and 11:00 PM, the Cantonese Journey menu invites guests to savor this unique dining experience in a relaxed yet vibrant setting. Hakkasan will temporarily close in July and reopen on August 1st, with provisional reservations starting on July 31st.
