The Londoner® Macao recently celebrated the grand opening of The Mews, an upscale Thai restaurant led by the imaginative chef known as Chef Nuch, whose full name is Nongnuch “Nuch” Sae-eiw. Diners can look forward to embarking on an unforgettable culinary journey through the rich and diverse flavors of Thailand. The restaurant prides itself on serving genuine Thai cuisine with a deep respect for tradition, while also incorporating contemporary culinary techniques, impeccable presentation, and a strong commitment to originality.

Chef Nuch’s dedication to authenticity remains steadfast, and she meticulously crafts each exceptional dish using locally sourced ingredients primarily from artisanal and organic farms in Thailand. This ensures that every bite delivers an authentic taste of Thailand. Originally from Bangkok, Chef Nuch has garnered extensive experience working at Michelin-starred and award-winning establishments in Thailand, making The Mews her inaugural opportunity to curate her own culinary creations.

Currently, The Mews offers two impressive tasting menus: the Seasonal Menu priced at MOP 888* per person and the Signature Menu priced at MOP 1,288* per person. Both culinary adventures commence with Welcome Snacks, which consist of four boldly flavored creations designed to tantalize the palate and prepare diners for the exciting culinary journey that awaits.

The Signature Menu showcases Chef Nuch’s most ambitious and elevated creations. One notable dish is the visually stunning Sunflower Chicken Tom Kha soup, featuring a succulent chicken roll stuffed with glutinous rice and wild mushrooms, served in a classic coconut soup and adorned with pickled onion pearls, adding rich umami depth and complexity.

Another highlight from the menu is an elegant interpretation of the beloved Thai classic, red curry. Grilled Snake River Farm Wagyu Beef with Red Curry Sauce and Chakram Leaves features tender slices of Wagyu beef enveloped in a luscious red curry sauce, elevated by the addition of salty Chakram leaves and bursts of fresh chili.

To conclude the meal, guests are treated to the Purple Sweet Potato Dumpling Filled with Salted Egg Yolk, served with Candle Smoked Coconut Broth and taro pudding. This delicately balanced dessert harmoniously combines bold and subtle flavors and provides a unique sensory experience as the broth is smoked tableside using a tian op, also known as Thailand’s culinary candle, which holds a significant place in Thai cuisine’s royal dessert history.

The restaurant takes its name from London mews, historically known as rows or streets of houses with living quarters above, initially constructed as stables located behind large residences before the era of automobiles. As soon as guests step into The Mews, they are immersed in this rich historical narrative, complete with cast iron farrier and forging tools, horse shoes, and an arched brick ceiling that recreates the stabling and workshop area, showcasing 18th and 19th-century masonry techniques.

The enchanting design story continues throughout the dining rooms, with the main dining area boasting its concealed entrance, reminiscent of the original design where a hidden passageway connected the stable to the grand residence in front. Guests are invited to discover the correct horse-topped riding crop that serves as the door’s key to enter a Thai culinary paradise and three lavishly adorned dining rooms.

These dining rooms include the stunning Elephants’ room, dedicated to hand-carved wooden panels and lanterns, complemented by luxurious soft furnishings; the festive Lantern room, adorned with three-dimensional tiles and a ceiling adorned with soft-hued antique silk lanterns; and the intimate Giants’ room, a mesmerizing space adorned with hundreds of Thai door knockers offset by plush fabric-padded panels.

The remarkable interiors were meticulously crafted by Ashley Sutton of Ashley Sutton Design, renowned for designing some of the world’s most iconic food and beverage spaces. The extraordinary fusion of authentic Thai cuisine and meticulous interior design ensures that guests will feel transported as they embark on their culinary journey at The Mews.
