The Colonial at The Anam Cam Ranh Unveils a Luxurious Six-Course Tasting Menu

The Anam Cam Ranh’s fine dining restaurant, The Colonial, has introduced a special tasting menu that showcases a variety of Vietnamese ingredients, prepared with a touch of French elegance.

Designed with an open kitchen, a grand piano, and a garden-filled courtyard, The Colonial now offers a six-course menu created by The Anam Cam Ranh’s executive chef, Duy Anh Nguyen. Guests can also choose an optional wine pairing to enhance their dining experience.

The meal begins with an amuse-bouche—small, flavorful bites to awaken the palate—including a giant clam with sausage, daikon jams, caramelized miso glaze, herbs, and salmon roe. Another starter features Vietnamese beef tartare with caramelized cashew, fish sauce, crispy garlic, and betel leaf. The entrée follows with salted mackerel served alongside fermented star fruit, sour broth, chrysanthemum, and coriander oil.

For dessert, the menu includes tahini ice cream with a sesame chip, caramelized hajikami (pickled ginger shoot), and coconut milk sauce, as well as a traditional Nha Trang tofu pudding. An optional wine pairing offers selections from Australia, France, and Italy to complement each course.

Reflecting the charm of Vietnam’s Indochine era, The Colonial specializes in modern European and French cuisine with Vietnamese influences. Located near The Anam Cam Ranh’s open-air lobby and next to the cozy Saigon Bar, the restaurant serves a premium European buffet and à la carte breakfast. During the day, it operates as an exclusive club lounge for guests staying in premium suites and villas.

Guests staying in the Ocean View Pool Villas, Ocean Front Pool Villas, Honeymoon Villas, Terrace Sea View Suites, and The Anam Terrace Suites have access to the club lounge from 7 a.m. to 5 p.m. daily. In the evening, the space transforms into a fine dining restaurant.
