Renowned pastry chef Michael Bartocetti has introduced an opulent Tea Time experience, celebrating the festive season at Four Seasons Hotel George V, Paris. Crafted for enjoyment with family and friends, this alluring experience promises to gratify the sweet cravings of dessert enthusiasts.

Commencing the culinary journey is a miniature Yule Log, featuring this year’s Christmas Log by the skilled pastry chef. At the core of this delectable creation lies a light, creamy mousse infused with cocoa pod mucilage. Complemented by a delicate roasted vanilla biscuit, it harmoniously pairs with a crispy layer of toasted bread and coffee bean crisp.

Following this, guests are treated to a Baba with Mulled Wine, generously topped with velvety cream infused with Christmas spices, creating inviting aromas reminiscent of cozy winter evenings.

To cleanse the palate after indulging in rich flavors, the experience continues with a delicate sweet infused with fragrant and floral elements. The frozen Damien Blasco citrus and rose geranium vacherin offers a delightful blend of fruity and tangy aromas, paying homage to the craftsmanship of ceramic artist Olga, with whom Chef Bartocetti shares a close professional bond.

In homage to his Italian heritage, Michael Bartocetti presents his interpretation of a Thin Chocolate Tart, incorporating traditional ingredients from northern Italy, including Piedmont hazelnuts and Alba white truffles.

Concluding the dessert sequence are two irresistibly buttery treats. Starting with Juliette’s Sable, filled with a compote of Reine de Reinette apples, this much-loved sweet delight is named after Juliette, one of Michael’s lively sous-chefs with Breton roots. Accompanying this temptation is a creative variation of the traditional cheesecake, carefully disassembled and elevated with zesty notes of bergamot lemon.

To extend the festive conviviality, Chef Bartocetti has crafted a flaky Stollen, paying homage to his childhood in Lorraine. Served just warm, this exquisite brioche evokes the flavors of yesteryear, inviting guests to savor it with a sense of childlike delight.
