Created by the founders of The Resort at Paws Up, the green o is an adults-only luxury contemporary retreat opening on June 1, 2021.

The green o was designed to celebrate the scenic beauty and flora and fauna of the Montana timberland.  To save the natural beauty of the surrounding forest, the construction of each Haus was built without cutting down trees or disturbing the land.  Other sustainability initiatives include construction methods that raised each Tree Haus off the natural forest floor, living roofs on Green Haus buildings, rooftop decks to showcase the surrounding forest canopy, a restaurant with ranch-to-table dining and a living roof, a limit on gas vehicles allowed on property, lighted walking trails, mountain bikes provided upon request and eco-friendly lighting systems.

The Social Haus is the true heart of the green o, just a short walk from each of the resort’s Haus accommodations.  The green o culinary philosophy is “cook locally, cook sustainably.”  The resort also showcases an open kitchen centered on live-fire cooking inspired by the Western heritage.

The Social Haus, led by Executive Chef Brandon Cunningham is the true heart of the green o, just a short walk from each of the resort’s Haus accommodations. The restaurant features a central fireplace and soaring windows open to the outdoors, mingling cooking aromas with fresh, pine-scented air. Details like Shou Sugi Ban wood and artisan lighting accentuate the feeling of being enveloped in the forest. At the green o, Cunningham sees a “juxtaposition of elegant presentations with primitive live-fire cooking.”  He credits his tenures with live-fire legend Chef Jason French at Ned Ludd, pasta guru Chef Matt Signler at Renata and El Bulli veteran Chef Sunny Jin at The Resort at Paws Up for his diverse background.

James Beard Award-nominated Chef Krystal Swenson joins Cunningham to create culinary delights like Salted Milk Jam Crullers. Guests of the green o can also dine at Paws Up’s restaurants, featuring Jin’s signature dishes, tantalizing barbecue by Chef Sheldon Mason and the creations of Executive Chef Alison Beazley, formerly of the famed French Laundry.

Activities

Here you can find countless outdoor activities and adventures from 37,000-acre property, with more than 100 miles of trails and a 10-mile stretch of the Blackfoot river, along with 1.5 million acres of the nearby Bob Marshall Wilderness Area.  Travelers can find outdoor adventure activities such as ATV ranch tour, fly fishing, sky line aerial adventure park, and rock climbing.  In addition, there are river and lake activities including jet skiing, kayaking, sailing and swimming, and boat tours.

Rates at the green o start at $2,786/night before taxes and resort fee for two adults, inclusive of three daily meals; house beer, wine and liquor; airport transfers and on-property transportation.
