Sofitel Transforms the Classic Croissant into a Seasonal Masterpiece with the New Fruit Kiss Collection

Sofitel continues to redefine the boundaries of the continental breakfast with the debut of its second limited edition La Haute Croissanterie collection. This summer’s installment, titled Fruit Kiss, serves as a sensory love letter to peak season produce. Following the success of its inaugural botanical series, the brand has curated ten distinct pastries that marry the rigorous technique of French baking with the vibrant, fleeting flavors of market fresh fruit.

A Global Culinary Collaboration

The collection represents a coordinated effort among Sofitel’s elite pastry teams across the globe. This year, the roster includes new contributions from Sofitel Legend Casco Viejo in Panama City and Sofitel London St James. They join returning masters from iconic outposts in Mexico City, Sydney, Dubai, and Paris. Together, these chefs have moved beyond simple fillings to create edible compositions that prioritize textural contrast and natural sweetness.

The Seasonal Menu

The Red Fruits – In the Raspberry Kiss, the fruit arrives with a vivid acidity that is grounded by an unexpected infusion of warm basil. The addition of tangy Greek yogurt and a dusting of gold leaf elevates the pastry into a refined dessert. The Cherry Kiss offers a more concentrated experience, utilizing a glossy compote that captures the fruit during its notoriously brief window of perfection. For those seeking depth, the Fig Kiss features fruit slow cooked until dark and jammy, balanced by a cloud of light mascarpone and a whisper of cinnamon.

Citrus and Stone Fruit – The Lemon Kiss is an exercise in editorial restraint. A sharp lemon cream meets whipped ricotta to create a profile that is both intense and weightless. The Peach Kiss takes a softer approach, featuring fruit poached until velvety and scented with orange blossom. In the Apricot Kiss, the pastry chefs lean into the heat of summer, using a bright gel and a delicate almond chantilly to mimic the sun drenched skin of the fruit.

Tropical and Exotic Profiles – The Mango Kiss treats the fruit as a visual still life, layering ripe slices over golden pastry and garnishing with borage flowers. Meanwhile, the Passion Fruit Kiss provides a high energy burst of tartness that is suddenly softened by a chantilly infused with vanilla and fresh coriander. The Coconut Kiss offers a more meditative experience, focusing on the artisanal texture of hand shaped curls and candied fruit. Finally, the Red Apple Kiss reimagines a classic through the lens of French zest, using vanilla bean to transform slow cooked apples into something luminous and entirely new.

This global takeover will last for only three months. It stands as a testament to Sofitel’s commitment to the croissant as an evolving canvas for luxury, ensuring that the most important meal of the day is also the most sophisticated.
