On Friday, April 17, 2026, Spago at Bellagio will welcome guests for an exclusive wine dinner celebrating the celebrated wines of Williams Selyem. Set within Celebrity Chef Wolfgang Puck’s lakeside restaurant, the evening will unfold as a curated multi-course experience pairing Puck’s signature seasonal cuisine with selections from the renowned Russian River Valley winery. Williams Selyem winemaker Jeff Manghas will lead the dinner, guiding guests through each pairing with commentary on the wines and the vineyards behind them.

Founded in 1979 by Burt Williams and Ed Selyem, Williams Selyem began as a small garage operation in Forestville, California, before earning national recognition for its vineyard-driven Pinot Noir and helping to establish the Russian River Valley as one of the country’s premier appellations for the varietal. Today, the winery remains committed to limited-production wines sourced from some of Sonoma County’s most respected vineyards.

The evening’s menu opens with a Semolina Crisp topped with Smoked Salmon Mousse, Ossetra Caviar and Chive, paired with the Drake Estate Vineyard Brut Blanc de Noirs, Russian River Valley, 2018. Belgian White Asparagus follows, accompanied by Petit Sorel, Lemon Verbena Sabayon and Cracked Pepper, alongside the Unoaked Chardonnay, Russian River Valley, 2023. For the fish course, Roasted Line Caught Black Bass arrives with English Peas, Spring Garlic Emulsion and Sauce Vert, matched to the Pinot Noir, Russian River Valley, 2023. The main course features Wood Grilled Farm Raised Venison with Morel Mushrooms, Pickled Wild Mulberries and Natural Jus, paired with the Pinot Noir Westside Road Neighbors, Russian River Valley, 2016. The evening concludes with a Classic Austrian Kaiserschmarrn, served with Golden Raisins and Frog Hollow Apricot Compote, alongside the Late Harvest Gewürztraminer, Vista Verde Vineyard, San Benito County, 2017.

Reservations are required and available between 6 p.m. and 9 p.m., allowing guests to select their preferred seating time. The dinner is priced at $350 per person, plus tax and gratuity. Reservations can be made by visiting Bellagio online or by calling the Bellagio Concierge at (866) 906-7171.
