Four Seasons Hotel Singapore has exciting news for its guests as they announce the return of the Peranakan Afternoon Tea. Collaborating with the world’s first Michelin-starred Peranakan restaurant, Candlenut, the hotel promises an elevated gastronomic experience. The specially curated menu will be available at One-Ninety Bar from March 2 to July 28, 2024.

This culinary journey draws inspiration from the rich heritage of Peranakan culture, blending tradition with modern luxury. The menu offers a symphony of flavors meticulously crafted by the hotel’s culinary experts and Candlenut’s Chef-Owner, Malcolm Lee, renowned for his innovative approach to Peranakan cuisine.

Guests can relish an assortment of dainty sweets, including Candlenut’s signature Kueh Salat and Cassava (Tapioca) Kueh, both back by popular demand. The Kueh Salat, a traditional Nyonya treat, features a smooth pandan-coconut custard atop glutinous rice cake infused with fresh blue pea flowers. Another favorite is the Cassava Kueh, boasting a layer of caramel custard for a delightful texture contrast, finished with a glossy layer of caramelized sugar.

Executive Pastry Chef Audrey Yee presents her rendition of Peranakan sweets, offering a delightful Kaya Coconut Cake, Cempedak Crème Brûlée, and Pulut Hitam rice pudding dessert made with black glutinous rice and coconut milk. Chef Yee’s freshly baked Rempah Udang scones, accompanied by house-made pineapple jam and clotted cream, complete the sweet selection.

On the savory side, guests can enjoy Chef Lee’s Mom’s Chicken Curry with Prata, a cherished family recipe. Other highlights include Boston Lobster with Achar Bun, King Salmon Otak, and Chef Lee’s Laksa Crab Cake, inspired by the local Laksa dish.

The culinary journey continues with a trio of locally-inspired craft cocktails by Beverage Manager Gabriel Carlos and Head Bartender Sophia Kang. Guests can choose from cocktails like Chendol, Little Nyonya, or Straits Old Fashioned. For bubbly lovers, a Taittinger champagne tasting flight is available.

Completing the experience is the Candlenut signature tea blend, offering a fragrant blend of oolong and butterfly pea flower with notes of jasmine and pandan, along with a fine selection of specialty teas or freshly brewed coffee.

The Weekend Peranakan Afternoon Tea at One-Ninety Bar is available from 2:00 to 5:00 pm on weekends (Saturday and Sunday) from March 2 to July 28, 2024, with packages starting from SGD 68 per person.

Additionally, guests can enjoy “A Taste of Singapore” at One-Ninety Restaurant with a multi-cultural weekend buffet celebrating the diverse flavors of the Lion City. From Peranakan delights to savory Hainanese Chicken Rice and Malay Rendang, the menu showcases Singapore’s melting pot of cuisines.

The Weekend Brunch at One-Ninety Restaurant is available from 12:00 noon to 3:00 pm on weekends (Saturday and Sunday) from March 9, 2024 onwards, starting from SGD 128 per person, inclusive of a non-alcoholic signature drink.
