For a span of nine weeks, starting in the fall, the people of Chicago and those visiting the city have the opportunity to savor a pop-up dining experience at The Peninsula Chicago known as “Sushi POP!” This unique dining concept showcases expertly crafted sushi and Japanese delicacies originating from the restaurant’s Sushi Bar, debuting at The Lobby restaurant every Friday and Saturday evening from September 22 to November 18, 2023. The pop-up event incorporates a playful twist on the word “POP!” while infusing a touch of nostalgia from the ’80s and ’90s into the overall experience, featuring elements of Pop Music, Pop Culture, and Pop Art.

“In recent months, there has been a resurgence of interest in the ’80s and ’90s pop culture era. When we first considered bringing this pop-up concept to life, we thought it would be enjoyable to put a unique spin on ‘everything Pop’ at this special event,” shared Kyle Spaull, the Lobby Manager. He went on to say, “Today’s diners are in search of exceptional sushi, and we have simply combined delectable, homemade sushi with all things Pop.”

Diners are presented with a diverse selection of freshly prepared Sushi Maki Rolls, including options such as Crunch Smoke Lobster Maki and Smoked Cucumber Avocado Maki (a vegetarian choice), all crafted at the Sushi Bar within the restaurant. Main course selections encompass dishes like Maguro Caprese, Kanpachi Crudo, Lobster Sarada, and more. For those seeking vegetarian or cooked options, choices like Beef Gyoza, Tempura Vegetables, Vegetable Springrolls, and others are available. The menu also boasts a variety of Sashimi and Nigiri selections, along with a unique sushi tasting menu curated by The Lobby’s sushi chef.

Pop-Up Beverage Menu:

The bar menu showcases a distinctive array of Japanese beers, whiskies, and sakes. The cocktail options take guests on a journey down memory lane with the “Walkman Playlist,” named after beloved pop songs from the ’80s and ’90s, featuring cocktail combinations reminiscent of that era. There’s even a cocktail that goes “POP!”

Pop Music:

An in-house DJ, spinning vinyl records featuring iconic pop culture movie soundtracks and the top 100 songs from the ’80s and ’90s, sets the stage for a vintage ambiance, with toes tapping and the vibe flowing.

When and Where:

Sushi POP! unfolds on Friday and Saturday evenings from 6:00 pm to 10:30 pm, spanning from September 22 to November 18, 2023, within The Lobby restaurant, situated at The Peninsula Chicago, 108 East Superior Street in Chicago. Guests are encouraged to embrace ’80s/’90s vintage attire for the occasion.
