One of the standout experiences is Iris Expedition Dining, a restaurant that offers a truly unique food experience in the heart of the Hardangerfjord. This exclusive dining spot is located at the Salmon Eye, an art installation and visitor center for the aquaculture industry. When you visit Iris, you get the complete package: breathtaking views of the fjord, majestic mountains, and an ever-changing environment that adds to the magic.

At Iris, the restaurant experience is like embarking on a journey. It all starts with a boat ride on one of the fully electrical boats, Malm and Melder, from the center of Rosendal to chef Anika Madsen’s boat house on Snilstveitøy. Here, you’ll be presented with the evening’s menu and enjoy a welcoming snack. The journey continues to Salmon Eye, where you’re in for a truly immersive experience.

With the magnificent view of the fjord and mountains as your backdrop, Iris takes you through an 18-course tasting menu, with each dish offering a unique taste and experience. If the weather permits, one of the courses will even be served on the rooftop, grilled over an open flame for you to savor in the fresh fjord air. As the evening comes to a close, you’ll be transported back to Rosendal by boat, marking the end of your unforgettable journey. To learn more about the seafood industry, you can also combine the restaurant experience with a tour of Salmon Eye.

The cost of this extraordinary experience, including the tasting menu, is 3200 kr per person. Keep in mind that a minimum of two people is required to book the tasting experience.

Salmon Eye provides a guided learning experience that centers around the impact of the aquaculture industry in Norway.
