The iconic Grand Wailea, a Waldorf Astoria Resort, has announced the debut of its newly reimagined dining concept, Olivine. This development follows the recent refresh of four additional onsite culinary venues and a comprehensive renovation of the resort’s rooms, suites, and exclusive Napua private lounge.

The unveiling of Olivine signifies the next phase of the resort’s revitalization, which includes a complete overhaul of its flagship Humuhumunukunukuāpuaʻa dining venue. Furthermore, the eagerly awaited debut of Grand Wailea’s reimagined spa is scheduled for the upcoming year.

Olivine takes pride in its dedication to honoring the natural beauty of the surrounding lush environment. The restaurant specializes in coastal Italian cuisine, expertly prepared using locally sourced ingredients. Complementing the culinary delights, Olivine offers a selection of craft cocktails and an extensive wine list, all carefully curated to enhance the dining experience while providing stunning vistas of the Pacific Ocean.

Situated in the resort’s picturesque oceanfront location, previously occupied by Bistro Molokini, Olivine has undergone a stunning transformation inspired by its namesake mineral, known as the “Hawaiian diamond.” This mineral, shaped over time by the steady flow of lava, serves as a muse for Olivine’s design. The redesigned space, a creation of Tihany Design, the esteemed studio responsible for the resort’s previous venue makeovers, boasts a captivating color palette rooted in nature. Muted greens, yellows, blues, and sandy neutrals harmonize with geological and mineral textures, seamlessly blending with the coastal aesthetics of Positano, a charming town along the Amalfi coast. This combination of colors and textures serves to ground the overall aesthetic in the natural elements that surround the resort.

The Italian menu at Olivine features handmade pastas by Chef Michele di Bari of Sale Pepe, Maui’s beloved Italian bistro that brings a taste of Milan to Hawaiʻi. The menu showcases authentic dishes that incorporate local produce and seafood sourced from Blue Ocean Mariculture, a sustainable aquaculture operation based in Hawaiʻi. To highlight the variety of herbs grown on the resort’s property by Head Landscaper Jim Heid, the menu includes a seasonal initiative that infuses these herbs into menu items, olive oils, cocktails, and more, reflecting the abundance provided by the lush vegetation surrounding the resort.

Signature menu items at Olivine include Molokai sweet potato ravioli with lemon almond pesto, cacio e pepe made with tonnarelli, Parmigiano Reggiano, pepper, and caviar, Hawaiian Kanpachi crudo served with aged pancetta, smoky Romanesco, candied kumquats, and ogo, as well as a selection of wood-fired pizzas topped with seasonal ingredients.

The ambiance at Olivine transforms effortlessly throughout the day, mirroring the harmonious shifts of heaven, earth, and sea. During the daytime, guests can enjoy signature dishes like housemade pizzas and ‘ahi salad, while the evening brings a transition to Blue Ocean seafood dishes and fresh pastas. As the setting sun paints the sky, a selection of craft cocktails specially designed for dinner and a sommelier-curated master wine list become available, allowing guests to experience menus that are thoughtfully tailored to the time of day.

Olivine opens its doors to the public on June 20, 2023. It serves lunch from 11 a.m. to 3 p.m., offers an intermezzo menu from 3 p.m. to 5 p.m., and serves dinner from 5 p.m. to 9 p.m. While walk-ins are welcome, reservations are encouraged and can be made at https://www.grandwailea.com/dine/olivine.
