On Friday, June 23 at 7 p.m., ARIA Resort & Casino is set to host one of Napa Valley’s most elite wine producers for a one-night event. Silver Oak Cellars will present a wine pairing experience in collaboration with celebrity chef Jean-Georges Vongerichten at Jean Georges Steakhouse. Throughout the evening, guests will be guided by Silver Oak Third Generation Vintner Matt Duncan, who will provide insights into the wines accompanying each course. Chef Vongerichten will complement the dinner with a refreshing summer menu.

MGM Resorts International Executive Director of Wine and Master Sommelier Douglas Kim acknowledged Silver Oak Cellars’ global reputation for its distinct taste and quality Cabernet Sauvignon wines. In addition to the impressive selection of wines to be served at the dinner, the team will also present an exclusive reserve wine from their collection specifically for the guests.

The dinner menu for the event will feature a delightful array of dishes. During the reception, guests will be treated to Egg Toast, Crispy Sushi, Mushroom Spring Rolls, and Shrimp Satay. To accompany this course, they will enjoy the Gaston Chiquet “Tradition Premier Cru” Brut Champagne.

The first course will consist of Madai Sashimi with Summer Peas and Herbal Buttermilk Emulsion. For the wine pairing, Twomey Cellars will serve their Sauvignon Blanc from Napa and Sonoma County, vintage 2022.

Next, the second course will showcase Foie Gras and Strawberry Brulee with Aged Balsamic. Guests will savor the flavors alongside a glass of Twomey Cellars’ Pinot Noir, Monument Tree from Anderson Valley, vintage 2016.

The third course will feature Charred Duck Breast with Tomato and Mole. The wine pairings for this course will include Silver Oak’s Library Release from Alexander Valley, vintage 2013, and Silver Oak’s Library Release from Napa Valley, also vintage 2013.

For the fourth course, attendees can indulge in Wagyu Beef crusted with Pastrami Spices, served with Smoked Potato Puree and Red Wine Jus. The wine pairing for this course will be Ovid’s Napa Valley vintage 2019 and Ovid’s Hexameter, also from Napa Valley, vintage 2019.

To conclude the meal on a sweet note, dessert will consist of Rose Glazed Cherries, Matcha Sponge Cake, and Dark Chocolate Ganache. The perfect accompaniment to this decadence will be the Château Rieussec, Premier Cru Classé, Sauternes from France, vintage 2007.

Tickets for the event are priced at $750 per person, excluding tax and gratuity. Due to limited seating, reservations are necessary and can be made by visiting ARIA online.
