In a bid to prepare for the winter chill, food enthusiasts can now indulge in a specially curated 6-course set menu by Galaxy Macau™ chef Pat Pun of Pang’s Kitchen and traditional Chinese medicine (TCM) expert Dr. Lam Hou Chio. The collaboration aims to provide both nourishment and flavor by aligning with the principles of traditional Chinese medicine.

According to the ancient Chinese medical text, “The Inner Canon of the Yellow Emperor,” the key to winter wellness lies in conserving kidney energy and vitality. Drawing from this wisdom, Chef Pat Pun and Dr. Lam carefully selected herbs and ingredients based on their medicinal properties, creating a menu that embodies centuries of medical knowledge.

For instance, the Double-boiled Quail with Jilin Ginseng and Schisandra is tailored for men, combining high-quality ginseng and Schisandra to enhance resistance, strengthen the spleen and lungs, and nourish the heart and mind—crucial during the virus-prone autumn and winter months. Meanwhile, the Double-boiled Sea Cucumber, Dried Scallops, Seahorse, and Pork Soup is designed for women, aiming to boost blood circulation, dissipate knots, and achieve a balance for optimal nourishment.

Signature dishes like Slow-cooked Venison and Deer Tendon with Tangerine Peel and Codonopsis, Braised Assorted Mushrooms with Red, Brown, and Black Rice, and Poached Spotted Grouper with Fox Nut Barley in Soya Milk reflect the innovative and health-centric approach of Pang’s Kitchen.

To complement the dining experience, Dr. Lam’s Herbal Tea Blend, featuring Astragalus Root, Red Date, Rose, Goji Berry, and Liquorice, offers a traditional prescription for strengthening the liver and eyes while calming the nerves.

Putien, known for its “Fresh Ingredients, Original Taste” philosophy, is unveiling the “Putien Food Festival” this winter. The festival focuses on showcasing one seasonal prime ingredient at a time, and this winter, it’s all about the exceptional “Jiangkou Pearl-like Oysters” from Fujian.

These oysters, unlike the typical ones, are locally known as Pearl-like oysters in Jiangkou, Fujian. They are smaller, with flesh the size of a pearl and a milky white color. Grown in seawater with moderate salinity in Putian’s San Jiang Kou, these oysters are nurtured for 120 days longer than regular ones, resulting in firm and tender meat with a rich flavor and minimal fishy smell.

Putien’s skilled chefs transform these rare oysters into delectable dishes, such as Fujian Fried Oyster Omelette, Chilled Oysters with Homemade Spicy Sauce, Braised Oysters with Basil, Stir-fried Oysters with Pork Belly and Pepper, and Braised Rice with Oysters and Seaweed. Additionally, Galaxy Macau presents a season of sizzling clay pot dishes, featuring signature dishes from six Chinese restaurants: Bei Shan Lou, Pak Loh Chiu Chow Restaurant, Galaxy Macau Tam Chai Yu Chun, Pang’s Kitchen, The Noodle Kitchen, and Lugang Cafe. Highlights include Stewed Fish and Lamb with Pickled Cabbage in Qingling Style from Bei Shan Lou and Air-dried Duck and Taro Casserole from Pak Loh Chiu Chow Restaurant. To add sweetness to the year-end festivities, Passion. by Gérard Dubois introduces sensational mille-feuille tarts. Made with French AOP butter for a crispy and flavorful pastry, these tarts come in Raspberry, Vanilla Bitter Orange, Belgian Chocolate, and Salmon & Dill flavors.

The mille-feuille tarts are available in limited quantities, with only 200 pieces made daily in three batches at 8:30 am, 12:30 pm, and 2:30 pm. Due to their popularity, they sell out quickly, so be sure to arrive early to savor these delightful treats.

In a successful collaboration between Galaxy Macau Integrated Resorts and the Macau SAR Government, the “Tastes of Macau, Artisans of Flavor” Culinary Legends Chapter 2023 has concluded.
