The 2025 selection spans 181 restaurants, a confident snapshot of a country in culinary ascent. This year’s guide includes 9 One MICHELIN Star restaurants (with one new entrant and one promotion), 63 Bib Gourmand establishments (including 9 newcomers), and 109 MICHELIN Selected restaurants (with 14 new additions).
Geographically, the growth is balanced and telling: 10 new additions in Hanoi, 7 in Ho Chi Minh City, and 7 in Da Nang, underscoring how excellence is no longer concentrated in a single urban center. Hanoi also celebrates a milestone with a newly awarded MICHELIN Green Star, recognizing leadership in sustainable dining.
As Gwendal Poullennec, International Director of the MICHELIN Guides, observed, the rise in Starred restaurants reflects a new generation of Vietnamese chefs returning to their roots. Armed with modern techniques, they are telling deeply personal stories—of hometowns, childhood flavors, and regional traditions—while street stalls, family-run kitchens, and long-standing neighborhood favorites continue to safeguard Vietnam’s culinary soul with quiet confidence.
One MICHELIN Star: Precision, Personality, and Place
Nine restaurants now hold One MICHELIN Star status, representing the guide’s view of kitchens delivering cuisine of high quality, worth a stop.
Among this year’s standouts is CieL in Ho Chi Minh City, which enters the guide directly with a Star. Intimate and exacting, the restaurant showcases innovative cuisine defined by meticulous technique and thoughtful restraint.

Also in Ho Chi Minh City, Coco Dining earns a promotion, a recognition of its evolution under Chef Thanh Vuong Vo. Here, contemporary Vietnamese cuisine unfolds through fermentation, modern methods, and a clear respect for tradition—served in a stylish, quietly confident dining room.

They join returning One MICHELIN Star recipients: Gia, Hibana by Koki, and Tầm Vị in Hanoi; Long Trieu, Ănăn Saigon, and Akuna in Ho Chi Minh City; and La Maison 1888 in Da Nang—each offering a distinct lens on what fine dining in Vietnam can be.

Reimagined in 2022 by chef-owner Hieu Trung Tran, the restaurant is built around a contemporary Vietnamese farm-to-table philosophy. Guests pass through a garden before reaching a counter-style dining room overlooking the open kitchen. Ingredients are sourced largely from the restaurant’s own farm in Phú Thọ—herbs, ducks, and black pigs included—while dishes such as the squid “noodle,” inspired by Phở Chua, demonstrate both technical creativity and deep cultural grounding.
