This summer, Atlantis Dubai invites guests on a journey of culinary discovery with a collection of limited-edition menus crafted by some of the world’s most celebrated chefs. Across its award-winning restaurants, diners can experience everything from Michelin-starred tasting menus to inventive interpretations of global cuisine—each one offering a distinct expression of summer’s finest ingredients and flavours.

Hakkasan
At the one Michelin-starred Hakkasan, Executive Chef Andy Toh presents a refined take on traditional Cantonese cuisine with a special summer set menu. Priced at AED 398 per person, the experience opens with a delicate dim sum platter, followed by jasmine tea-smoked wagyu beef ribs. The main course features a vibrant selection including spicy prawns, roasted truffle duck, stir-fried lotus root and asparagus, black pepper, and edamame egg fried rice. Ossiano
Set against the backdrop of the resort’s stunning aquarium, the one Michelin-starred Ossiano offers a six-course Summer of Discovery tasting menu that captures the imagination. At AED 750 per person, the menu begins with artful canapés like the Illusion of Oyster, Otoro Tuna Tartlet with Kristal Caviar, and King Crab. Signature courses include Primavera, a pea panna cotta with roasted nuts, and Mojama, a Spanish-inspired dish with heirloom tomatoes and chutoro tuna. Cod poached in kombu oil and langoustine on passionfruit jam add a briny elegance, while mains such as John Dory à la Meunière and Moroccan-spiced Wagyu beef offer bold, contrasting flavors. The experience concludes with a rich chocolate and almond sponge cake with ganache and milk chocolate mousse. Optional pairings include a wine selection starting from AED 600, or a non-alcoholic collection of house-crafted beverages for AED 250. Dinner by Heston Blumenthal
At the one Michelin-starred Dinner by Heston Blumenthal, history meets haute cuisine with a thoughtfully curated three-course summer menu. Guests can choose from Earl Grey Tea-Smoked Salmon (c.1730) or Rice and Saffron (c.1390) to begin, followed by either the deeply savoury Beef Royal (c.1821) or Roast Cauliflower with Truffle Sauce (c.1661). For dessert, the Liquid Nitrogen Ice Cream Trolley (c.1901) adds theatrical flair to a nostalgic finish. The experience includes a complimentary glass of fizz or a Pimm’s Cup and is served daily between 6 p.m. and 7 p.m., with the last order taken at 6:45 p.m. through August 31 at Atlantis The Royal.

Nobu Dubai
The celebrated Nobu Dubai brings its signature Japanese-Peruvian style to a special five-course omakase menu priced at AED 395 per person. The journey features salmon karashi su miso, a selection of sushi and rolls, canary seabass with spinach and jalapeño, and grilled wagyu ribeye. The meal concludes with Nobu’s famed cheesecake. Guests can dine in the main dining room, the 13-seat sushi bar, or a VIP booth overlooking the open kitchen. La Mar by Gastón Acurio

Vibrant, soulful, and deeply rooted in Peruvian tradition, La Mar by Gastón Acurio invites diners to explore a summer menu that celebrates the country’s coastal cuisine. Priced at AED 325 per person, the offering includes Taco Nikkei, Hokkaido scallops, seafood rice with tortilla, crispy potatoes with olive emulsion and Huancaína sauce, and a rich Torta de Chocolate layered with Peruvian chocolate, lúcuma dulce de leche, and vanilla ice cream. Ling Ling
Energetic and stylish, Ling Ling brings its signature East-meets-West energy to a three-course dinner menu that balances bold Asian flavours with playful elegance. Starters include miso-roasted eggplant, Szechuan chicken dumplings, shrimp tempura, BBQ duck bao buns, and more. For the main course, options range from roasted sambal salmon and Kung Pao chicken to crispy mapo tofu and mie goreng with chicken and shrimp. Desserts include mango pandan sticky rice, hazelnut chocolate moelleux, or a refreshing fruit plate. The experience includes a glass of bubbles, a cocktail, or a mocktail and is priced at AED 295 per person. Studio Frantzén
Atlantis, The Palm’s newest dining destination, Studio Frantzén, introduces a two-course summer menu created by acclaimed Swedish chef Björn Frantzén. Priced at AED 275, the offering allows diners to select from starters like veal steak tartare, seabass ceviche, grilled tiger prawns, and oysters, before choosing from a range of mains including grilled salmon, Angus striploin, baby chicken with sesame chili and miso, Wagyu beef burger, lamb rack, or BBQ celeriac with truffle and cabbage jus. Side options are equally tempting, from crispy Brussels sprouts with chili and sesame to deep-fried Hasselback potatoes with brown butter and cream cheese. The menu is served daily from 6 p.m. to 11:30 p.m. through September 30 at Atlantis, The Palm.
