In Montepulciano’s storied hills, Fattoria della Talosa has extended its winemaking ambitions beyond its celebrated reds to craft Pietrose Brut Rosé Metodo Classico Millesimato—a sparkling wine that redefines what Sangiovese can be. Entirely estate-grown and produced, Pietrose is a structured, elegant rosé with remarkable aging potential, designed to express the complexity and persistence of Montepulciano’s terroir in a new form.

Talosa, founded in 1972 by the Jacorossi family, was one of the first estates to champion the quality potential of Vino Nobile di Montepulciano. Today, its 33 hectares of certified-organic vineyards lie in the Pietrose district, the most highly regarded area of the appellation. Here, at elevations between 330 and 400 meters, southwest-facing slopes of stony, Pliocene-era soils yield fruit of exceptional concentration, aromatic purity, and natural acidity.

The Sangiovese for Pietrose is cultivated using the spurred cordon training system, with yields limited to approximately 4,000 kilograms per hectare to ensure intensity and balance. Harvest begins in early September, with a meticulous manual selection of clusters. After destemming and crushing, the must remains on the skins for about two hours to achieve its pale, delicate hue before a cool fermentation.

Following primary fermentation, the base wine undergoes secondary fermentation in bottle and rests on the lees for 60 months, developing complexity, fine texture, and depth. After disgorgement and dosage, Pietrose is aged for at least three additional months in bottle before release.

The resulting wine is a Metodo Classico rosé that combines the vibrant acidity and red-berry precision of Sangiovese with a refined perlage and notable structure. Its palate is fresh, persistent, and balanced, offering the ability to evolve gracefully for more than a decade.

Tasting Notes
Appearance: Pale, onion-skin pink with a fine, persistent bead.
Nose: Precise and linear, showing red currant, wild strawberry, and citrus peel, with subtle autolytic notes of fresh bread and almond.
Palate: Crisp attack with firm acidity and a tightly knit mousse. The mid-palate is focused, highlighting red-berry fruit, light herbal nuances, and a pronounced mineral backbone.
Finish: Long, dry, and saline, with excellent tension and persistence.
Structure & Aging: Excellent balance between acidity and phenolic texture, suggesting capacity for graceful development over 8–12 years.

Pietrose Brut Rosé stands as both a tribute to Talosa’s heritage and a bold step forward, proving that Montepulciano’s terroir is as capable of producing world-class sparkling wine as it is age-worthy reds.
