Perched above the harbor of Gustavia, Pablo Saint-Barth marks the latest chapter in Indie Group’s international expansion, following destinations in Courchevel, Megève, Paris, and the French Riviera. Conceived as the Caribbean counterpart to the cult favorite in Saint Tropez, the restaurant blends sun drenched flavors with a refined yet playful sense of celebration.
The venue unfolds across two levels, offering a seamless transition from sunset dining to late night revelry. The Rooftop sets the tone at golden hour, where natural textures, warm light, and tropical accents frame an open air dining room overlooking the port. The menu is bright and coastal, built around freshness, acidity, and dishes designed to be shared.
Seafood takes a leading role. Scallops green aguachile pairs pristine scallops with crisp apple and cucumber, brought into balance by a citrus sauce sharpened with green chili and lime. Coconut spiny lobster ceviche layers tender lobster with coconut milk, ginger, lime, jicama, and avocado, delivering both richness and lift. Tuna and caviar tostadas offer a luxurious bite, with crispy corn tostadas topped with akami tuna, ossetra caviar, creamy guacamole, and a gently sweet salsa macha. Warm plates follow the same confident hand, from pop corn Chilean seabass glazed with jalapeño and ginger sauce to indulgent wagyu picaña, a bold counterpoint to the ocean driven menu.
As night falls, the energy shifts downstairs to the Night Bar. Music grows louder, cocktails flow freely, and the atmosphere turns unmistakably festive. Signature drinks, premium spirits, and DJ sets carry the evening late into the night, cementing Pablo Saint Barth as both a dining destination and a social epicenter where food, music, and Caribbean glamour converge.
