A renewed sense of energy is shaping Nerano in Beverly Hills as the Italian restaurant enters a new phase under Executive Chef Sam Mumford. The updated direction includes a refreshed menu and a Pasta Flight tasting experience offered in recognition of National Pasta Day, taking place October 13 through 19.
Recognized by San Pellegrino as one of the “Top Young Chefs Under 30,” the 28-year-old chef brings a background rooted in Michelin-level technique and a focus on seasonal ingredients. Originally from Lynden, Washington, Mumford developed his approach at restaurants including Pasta Bar, Gwen Butcher Shop, and Koast. His cooking emphasizes simplicity, sustainability, and an understanding of how food connects people through shared experience.
In celebration of National Pasta Day on October 17, Nerano introduces its first Pasta Flight Tasting Menu—a three-course presentation of handmade pasta. The selection includes Artichoke Ravioli with charcoal dough, shallots, and burnt onion; Spicy Vodka Paccheri with salsa rosa piccante and Parmigiano Reggiano; and Mushroom Pappardelle with Chianti Classico, chanterelles, and pecorino. Guests may choose to add Italian wine pairings, tableside martini service, or shaved truffles.
The new menu continues to feature Nerano’s signature dishes, such as Linguini alla Nerano, while introducing several additions that reflect Mumford’s perspective on Italian cooking in California. New items include Beef Cheek Agnolotti with polenta and jus, Amberjack Crudo with leche de tigre and pickled Fresno chili, Tuscan Lamb with rosemary and balsamic, and The Jane Salad with charred radicchio, arugula, goat cheese, and pine nuts.
Nerano is also offering a dry-aged Wagyu Burger for the first time, served on a toasted brioche bun with melted provolone, crispy onions, and housemade aioli.
The restaurant’s evolution is supported by Oliver Clowes and Roby Podeyn of Counter Culture Hospitality, whose team has contributed to concepts such as Funke, La Dolce Vita, and Sushi by Scratch Restaurants. Their approach centers on thoughtful service and creativity, guiding Nerano as it refines its place within the Beverly Hills dining landscape.
