Boutique cruise operator Ambassador Cruise has introduced a new dining concept set against the dramatic backdrop of Halong and Lan Ha Bays, both designated UNESCO World Heritage sites. The initiative, titled Dining Under the Stars, is now available aboard the company’s overnight cruises.
The experience features two distinct menus curated by Executive Chef Nguyen Gia Thien, served on the cruise ships’ 360-degree sundecks. Guests dine alfresco under ambient lighting and amid panoramic views of limestone karsts illuminated by the night sky. The setting is complemented by live music performances, creating a serene and elevated atmosphere.
Diners can choose between an international five-course menu, Heritage by Night, and a Vietnamese-inspired Four Seasons menu. The former allows guests to select two mains from five gourmet options, including roasted sea bass with chorizo butter and zucchini emulsion, pan-seared beef medallions with crispy potato and meat jus, and caramelized duck breast flambé with gnocchi and orange jus.
The Four Seasons menu showcases regional culinary heritage with dishes such as deep-fried Halong squid cake with young sticky rice, marinated beef and pomelo salad, and stir-fried scallops with organic mushrooms.
A notable feature of the experience is the daily performance by Ambassador’s international live band, offering a multilingual repertoire in English, Vietnamese, Korean, Indian, and Filipino. Performances take place every day except Monday.
Chef Thien’s culinary approach is informed by his recent training in France, where he explored classical European techniques while preserving Vietnamese culinary traditions.
Dining Under the Stars is available on all overnight Ambassador Cruise itineraries through Halong Bay and Lan Ha Bay. It will also be offered as part of select dinner cruises during the summer season for an additional fee.
