Grant Achatz is bringing Alinea to Las Vegas, and it will be the last time. The iconic Chicago restaurant, which Robb Report recently named the greatest American restaurant of the 21st century, will be in residence at Michael Mina’s eponymous dining room at Bellagio Resort & Casino from April 16 through May 31, marking the final stop of a 20th anniversary tour that has already sold out in Brooklyn, Miami Beach, Beverly Hills, Tokyo, and Big Sky.
The residency is not a replica of what Achatz serves in Chicago. That has been the point of the entire tour. At each stop, Achatz and his team have worked alongside local chefs and purveyors to build a menu that carries Alinea’s DNA while absorbing the flavors and ingredients of the host city. Las Vegas will be no different. Bellagio’s culinary team and local producers will collaborate directly with the Alinea kitchen, resulting in a menu that balances the restaurant’s signature modernist approach with something genuinely specific to this place and moment. Iconic Alinea staples will appear throughout, anchoring a dining experience that also reflects the particular creative energy that comes from cooking outside a home kitchen.
For Achatz, the tour has always been about more than anniversaries and accolades. Many members of the Alinea team are young, and the chance to travel, cook in new cities, and work alongside different culinary communities has been central to the project. The tour, as Achatz has described it, is a love letter to the restaurant industry itself, a way of acknowledging the farmers, winemakers, peers, and guests who shaped the restaurant over two decades.

Alinea was founded in 2005 and has held three Michelin stars for 14 consecutive years. Achatz, who was named Best Chef in the United States by the James Beard Foundation and included on Time Magazine’s list of the 100 Most Influential People in the World, built the restaurant around a deceptively simple original goal: to create one of the best restaurants in the world. The Alinea Group’s portfolio has since expanded to include Next, The Aviary, and the Office, all in Chicago.
