Las Vegas is about to get a lot sweeter. Salt & Straw—the wildly inventive ice cream brand with a cult following—lands on the Strip on Wednesday, Dec. 31, opening not one but two scoop shops at Paris Las Vegas (yes, right under the Eiffel Tower) and Flamingo Las Vegas. It’s a big moment for the brand, and they’re showing up in full celebration mode.

To mark the occasion, both locations are launching with The Icons Series, a greatest-hits-style menu curated by co-founder and head ice cream maker Tyler Malek. Think of it as Salt & Straw’s victory lap: the flavors people still talk about, dream about, and drag friends across town to try. It’s designed for the Strip—festive, over-the-top in the best way, and perfect for ringing in the new year with a cone in hand.

Founded by cousins Kim and Tyler Malek, Salt & Straw has always treated ice cream as more than dessert—it’s a conversation starter. The menu jumps effortlessly between cozy classics like Sea Salt with Caramel Ribbons and Double Fold Vanilla and flavors that make you pause, smile, and then immediately want a second scoop (hello, Strawberry Honey Balsamic with Black Pepper). Add in the brand’s monthly rotating menus—often inspired by farmers, artisans, seasons, and big cultural ideas—and you get ice cream that feels thoughtful, playful, and very now.

What to Scoop

The everyday lineup includes 13 always-available flavors, from Honey Lavender to Arbequina Olive Oil to Chocolate Gooey Brownie—low-key perfect staples that keep regulars loyal. On top of that, the rotating monthly flavors keep things fresh and surprise-driven.

For the Vegas debut, though, it’s all about The Icons Series, which brings the celebration energy:

  • Pots of Gold & Rainbows – Cereal-steeped ice cream packed with hand-sorted rainbow marshmallows (pure nostalgia, maximum joy).

The Details

Both shops offer easy sidewalk access along Las Vegas Boulevard. The Paris Las Vegas location (3655 South Las Vegas Blvd.), near Arc Bar at the base of the Eiffel Tower, is open daily from 11 a.m. to 11 p.m. The Flamingo Las Vegas shop (3555 South Las Vegas Blvd.), next to Gordon Ramsay Burger, stays open from 11 a.m. to midnight—because late-night ice cream is always the right call.
